Sausage is a low-cost, widely available processed-meat product. In medical simulation it stands in for intestinal loops (small intestine) because its tubular shape, soft consistency, and colour resemble exposed bowel. It is used as the protruding viscera of the gastroschisis model in the low-cost WALL-GO abdominal wall defect simulator (about 15 mm diameter, 15 cm length); being perishable, that model is effectively single-use, and a red cotton ball wrapped in cellophane tape is a documented non-perishable substitute (Medeiros et al., BMC Medical Education 2023).
