All your troubles with writing the files are because you are trying to create a binary file using tools for creating text files. Learn how to write a binary file using your preferred programming language, do not use anything with any encoding such as UTF-8 or latin-1 etc. Using a text encoding is absolutely the wrong way to create a binary file.
